
Academic Consortium Publications for March 2026
This month, we are celebrating a publication by Mariana Rodrigues da Silva, Qian Janice Wang, Ramya Rao, Silvia Sapio, Bastien Debeuf, Mikael A. Petersen, and Andrea Buettner who investigated how three types of farmed caviar were perceived under different conditions. There were two groups: 109 participants who evaluated the caviar samples blind and 113 participants who evaluated the caviar samples and interest in product information related to safety, nutrition, sustainability, fish welfare, geographical origin, production method, and other aspects. The participants expressed interest in product information, but regardless of information, the freshest caviar with the shortest storage time was often preferred based on particular sensory attributes and liking overall.
